Healthy steak dinner (if you don’t count the bearnaise)


About 10-12 mins

Ingredients 

1 steak

1 medium tomato, preferably on the vine

1 medium potato

Potato fillings – I chose butter, bacon and fresh chives

Mushrooms

Method

Prepare the steaks by making sure they are room temperature, and rubbing lightly with some oil (use whichever you prefer, I chose regular olive oil as cooking with extra virgin at a high heat can produce a slight bitter taste) then rub some salt and pepper or steak seasoning over the steak. Ideally they should rest for about ten minutes before cooking to help the salt tenderize the meat a bit.

You can cook the potatoes in the oven or the microwave. I chose microwave simply because it’s faster. Cooking it in the oven takes about an hour. 

Pierce the skin multiple times all around the potato. Cool them in the microwave for ten minutes.

While the potatoes are cooking, prepare the mushrooms by chopping in half, then melting some butter and garlic in a pan over medium heat.

Place the mushrooms in the pan, in the sizzling butter, after a few minutes turn them.

Meanwhile place the steaks in a hot smoking pan with no oil and cook until desired temperature. I cooked mine for 2.5 minutes each side as I prefer medium rare to rare steak and timed it so I put the steaks on 5 minutes before the potatoes come out of the microwave.

Once the mushrooms have been turned, place the tomatoes in the same pan, cut side facing up, turn after a coupled minutes or until there is a bit of a char on the tomato.

Once the potatoes are done, take out and cut in half and add your toppings, serve on a warm plate (warm plates always best!) with the steak and the mushrooms and tomatoes – you can put the veg on a kitchen towel to soak up the butter before plating as well.

Bearnaise sauce optional.

Exercise and staying on the treadmill

I’ve had a healthier year than most overall but lately have been eating the wrong foods and too much, and the daily exercise that was starting to become a daily thing has fallen by the wayside a bit. 

Great news then, when I see a link pop up in one of my RSS feeds for a ten minute workout. 

I’ve tried the seven minute workout, got into it for a few weeks but then started doing other exercises like weights and planks. It’s no joke, and I’ve heard great things about HIIT; that’s High Intensity Interval Training, of which 15 minutes is supposed to be more effective than 60 minutes of regular cardio or something like that. It certainly feels like it. Plus once you start working out its always easier to finish and extend your workout, which I always do “Yes! I love exercise! Why don’t I do this all the time?! This is great!” 

So I have this blog now, maybe I can keep up the consistency and I am already finding this process of documenting aspects of my life interesting, and also compelling in the way that it inspires and motivates me to do well but also invites questions on privacy and how much to share. 

I will aim to do this workout at the very minimum once a day and will keep reporting back.  Express Morning Workout by Glamour

From a fitter time earlier this year after Bae and I finished a charity 5k – must remember this feeling of satisfaction and achievement to motivate me to get back to that and more! (Even though I had run 5ks before I was seriously lagging behind and Bae kept having to wait and jog on the spot though this was when I still smoked)

And finally another instance of the above motivational message – I love this one and repeated exposure is supposed to help!

Healthy (ish) breakfast

  • Hovis Best of Both bread – bread is not great and I try to avoid it when I can but I figure that eating in the morning is better than any other time of day
  • Cucumber – I love cucumber, a necessary component of any type of sandwich. Common knowledge that it’s healthy to eat
  • Philadelphia garlic and herb cream cheese (this one is low fat as it happened to be in the fridge but I prefer full fat – better flavour and less sweeteners and other stuff in it, the right fat in moderation is better than low or no fat all the time
  • and finally a lovely cuppa tea – Yorkshire brand is my fave, with no sugar and full fat milk (if I am having a bad day I treat myself with some honey, and if you think no sugar in tea is hard consider this, I used to put SEVEN heaped teaspoons when I was younger, loved that sugary poisonous sludge before I knew what was good for me! So anyone can do it!!)

Why So and So?

I am a cynical person, but I also see the best in people. Sounds a bit like a contradiction, let me explain. I try to see all people as beautiful beings that are, like me, extensions of the godhead universal conciousness of which we are all a part. But that’s another story.

My cynicism was borne out of years of trying to find ways to organise my life, focus on my goals, achieve enlightenment, have financial security and coming up short or getting frustrated in the process. So now I feel like I have now turned in the right direction and will now start a journey that will help me achieve the above but first and most important, fur fire out how the hell to do that. Lately pieces of my life have been falling more into place and I have more clarity than I did before, call it getting older and wiser perhaps but I feel that I want to document this process to help myself and perhaps maybe help others who can see my mistakes and how to learn for they say a wise man learns from others mistakes and a fool leaned from his own, or something along those lines.

Right! Let’s begin. The whole thing started with the name, as someone who is extremely introspective, I was ruminating on my life one day (the day I write this) and the many possibilities and why I couldn’t  get myself to spur to action. then I thought about My So Called Life, a hugely popular series in the 90’s about the brutality of high school life and and those all important teenage emotions. I never really identified with the series tbh, everyone else was mad about it but I just liked Jared Leto, though I thought his character  was a bit of a dick, but then I started thinking is my life a so called life? If it is, is it so called anything? What is life?! But I digress, as I tend to, and so often it boils down to how I see my life and  am I happy in my life. I am lucky to have great family, great friends and a great boyfriend, but I am not fully satisfied.  I mean it’s so and so right now in that I have all these ideas and somehow can’t seem to put it into action, then I thought about what so could mean, maybe it could be a blog, yes! I’d write about what I want my life to be, so that so and so means something better!  After trying yet another productivity and goal setting app they talked about core values, which made sense when trying to sort your life out as it helpfully breaks it into sections you can then focus on with more clarity to set goals and such. So and So had to represent my core values and I needed it to fit the title. Simplified and Organized was easy, as life hacks are my thing and this fits into my personality and how I would like my life to be. Then I picked Successful because, well, everyone wants financial security, and finally Organic because food is life, organic is best and I plan to post a LOT about food. Also food is a genuine source of happiness for me and almost the entire planet, so win win really.
So to summarise; the main content will be about food and recipes, ways to save money, sometimes both, cool life hacks and reviews of all of the above.
Not a perfect summation but maybe I could add things later like my so & so & si? As in spiritual and (insert aspirational adjective beginning with “I” here) – “But no! I must focus and clarify goals, they must be S.M.A.R.T! Keep it to four only!” – this struggle is just one example of the many you will see on this blog.
